Blueberry cheesecake with skyr

This is a delicious three layered bluberry cheesecake using Icelandic skyr giving the cake a wonderful texture.

The first step is to make the first layer with bisquits/crackers.

  • Mcvities Digestives crackers with dark chocolate, about half a pack
  • 25 g butter

Crush the biscuits and put in a saucepan with the butter. Heat until the butter has melted,  mix well with the crushed biscuits.

But the cracker mixture in the bottom of a 24 cm/9 inch spring form.

Skyr mixture

1 cup skyr, preferably vanilla
1 cup heavy cream
1-2 drops vanilla extract

Whip the cream and combine with skyr and a couple of spoons of blueberries as well as the vanilla to taste.

Put on top of the crackers.

Blueberry glaze

  • 250 g blueberries
  • 4 tablespoons sugar

Place blueberries in a saucepan with some sugar, heat not boil. (You can substitute with blueberry jam).

Soften two sheets of gelatin in cold water. Dissolve in the warm blueberry sauce.

Spread the glaze over the cake and refrigerate until the glaze has stiffened.
